      VERY  HEALTHY  BESAN FLOUR RECIPES (Chick Pea)  (Low G-I)

FLAPJACK !  SPECIAL!

1 SMALL CUP BESAN FLOUR    1 EGG     1 TBLSP. OLIVE OIL or COCONUT OIL
CELTIC SALT . Then add PEPPER? CAYENNE? CURRY POWDER ? CUMIN Etc. 
Mix well with fork, kinder to egg yolk protein than a mixer)
ADD WATER or MILK FOR A BATTER – thick/thin depending what you are making.
If desired, while doing this fry a few unprocessed bacon bits in butter or coconut oil & ADD THESE TO THE BATTER FOR FLAVOUR.

NEXT  add grated cheese (Barambah good or Parmesan)  OR chicken pieces, OR meat OR fish E.G. Paramount wild Alaskan salmon).

NEXT, add LOTS OF GREENS (GOOD MIX) inclg SPRING ONION, LEEK, CAULI, GARLIC, BASIL, ROSEMARY, CORIANDER, MUSHROOM CHUNKS,  ETC. in other words what you want.

Looks a weird mixture, so much vegetable barely coated with the batter, it does set!
Fry slowly in butter with glass lid cover till ready to turn. Is golden brown, sometimes with crispy edge, attractive, tasty, yummy.      Serve as is or cold.

A LOAF can easily be made by quadrupling the quantities, adding a flat teaspoon of baking powder to the dry ingredients at the start, and baking mixture in a buttered, lined loaf tin (I use pyrex glass) at 180 deg. about ¾ hour in fan-forced oven.
 
For travel some cayenne pepper will make the flapjack seem more like a hot meal on the road as well as being good for you !

SAVOURY PANCAKE

You can make a thin plain batter (see above)  and serve hot, buttered, with cheese, tomato, avocado, Lebanese cucumber …..all ways are tasty. You can add garlic to the mix if desired.

SWEETER PANCAKE  ..same quantities but use ½ besan ½ coconut flour with extra oil so it won’t crumble and will roll to serve. Celtic sea salt & stevia (the green powder) together are healthy additions and enhance flavor. Fresh almond meal is permissible (Kept in the freezer) if you don’t like coconut flour.  You can add coconut to the plain batter, almond essence., cinnamon, seeds, crushed pine nuts etc. Be bold with these recipes and use your imagination.

PAN BREAD / PIKELETS (NO EGG)

Besan flour, celtic salt, stevia if desired, plenty butter fingered through, or use melted butter or melted coconut oil or olive oil. Add a little milk or water to make a more dough like mix.  (Maybe incl some Parmesan cheese? Fry in butter or coconut oil as for pancake. (Of course you can include egg if you wish)

 If you have a waffle iron, experiment with mixes.
